cab is starting the ferment process!
Your 2008 - Ink Grade - Cabernet Sauvignon grapes were processed into the following Ferment Vessel(s).
Any percentage of clusters not destemmed are left as whole clusters. Any percentage of berries not left whole are crushed.
If your wine plan calls for a cold soak, your fermenter will be cooled down to approximately 50F for the timeframe specified in your plan.

So, what does this mean? Right now a ton of grapes are hanging out in a Tbin waiting to receive the special yeast innoculation that we have planned. Thursday evening we are going to hydrate the yeast and give the little yeasties lots of love so that they work their magic. There are millions of yeasties so send some love their way Thursday evening. And, of course, if you want to see this process come join us.
